• 2 cups flour
• 2 Tablespoons baking powder
• 2 Tablespoons brown sugar
• 1 teaspoon baking soda
• 1 teaspoon salt
• 1 teaspoon caraway seeds, crushed (optional)
• 2 eggs
• 2 cups buttermilk
• 1-1/2 cups applesauce
• 4 Tablespoons butter (melted)
• 1 cup cooked ham (diced tiny)

Lightly grease a very hot griddle or pan. Pour from pitcher onto griddle forming pancakes the size of your choice. Turn when bubbles form on top of pancakes. Cook until second side is golden brown.

Grandma would serve sprinkled with powdered sugar, then drizzle warm maple syrup over pancakes.
